The great thing about EVOO is that it's already passed a few tests to be able to get its EVOO designation, including no chemicals or heat, and even taste/smell tests!.
The key thing is freshness which often means the more local the better (Tuscany can be a long way from home). Look for bottles with a harvest date rather than just an expiration date!

Kate, yes! Same. Fat barely touched my lips for a decade. It was seen as the enemy. I sometimes wonder if that contributed to my later osteoporosis diagnosis, which I've now wrestled into the corner. I'm a full fat girl all the way now. So much more satiating and less processed / fewer UPFs.

Consuming my fair share of EVOO right now in Italia. I wonder if there is a suggested maximum daily intake.
Dr Mary Flynn, Brown University — one of the leading EVOO experts — told me she prescribes 6-8 tbs a day to older patients. Keep chugging!

I’m not a baker really. I think my favourite is simply it and lemon juice on my salad.

Adore extra virgin olive oil. So good with fresh bread and dukkah.
But I also use ghee for stir-fry or high temp cooking.
